A keto recipe reset.

The cake that derailed me! It tasted so good!

Oops… I may have enjoyed Buggy’s 6th birthday waaaay too much. He had 3 celebrations for his birthday this year. One on his actual birthday, one with the Iowa family, and one back in MN with my family. Apparently, that is how we roll. I thought I would just have one piece of cake on his actual birthday because of course I slaved over a hot oven for hours making an amazing double-decker cake from scratch. Uh, no. It was a cake from a box of course. But I did mix it up and put it in the oven. And it was a double-decker. I had a just a small taste of the cake (while I was licking the bowl!) and I really wanted a piece. Well, that one piece snowballed into a week of pretty terrible eating! Yikes! I am now regretting the poor (but oh so tasty) choices I made. In light of this, I am doing a reset on Keto, with my 5 favorite recipes so far. These are the ones that I make as often as I can. I would make them more, but some of the meals the Hubster complains, “Didn’t we just eat this?” Hello, that was like three days ago. Oh, well. Enjoy my top 5 Keto recipes.

  1. Fathead Pizza Dough

What I am about to say may be blasphemous, but I will say it anyway. I think this pizza crust might be better than regular pizza. I love it and the Hubster actually likes it too! The recipe is just for the crust so you can top it with anything Keto-friendly. We do ground beef, green peppers, onions. Then I put on pepperoni and he puts on mushrooms. Well, I put the toppings he wants on for him. I recommend Rao’s Homemade Pizza Sauce. It only has 2 carbs.  Check out the recipe here.

2. Slow Cooker Keto Taco Soup

I have Taco Tuesday every week because, why not? This recipe is great for when the Hubster whines, “Tacos again?” Of course not, it’s taco soup. Way different. This soup has all the flavors of tacos without the carbs! It’s also made in the crock pot, so its super easy, which is the best part. Find the recipe here.

3. Cheesy Ranch Chicken & Broccoli Casserole

Being from Minnesota, I grew up on hot dishes, which is what we call casseroles. I love a good hot dish and this a good one. It has all the things I love baked into one ooey, gooey, cheesy pan. Who can go wrong with chicken, bacon, and ranch? Soo yummy! You can find this recipe here.

4. Keto Pancakes

I am a huuuge breakfast person. It could be one of my favorite things in the planet. It is one of the things I miss most about the keto lifestyle. Pancakes, waffles, French toast, hash browns. I could eat breakfast for every meal, every day. Of course, I cannot. But I can make these awesome pancakes and they are almost as good as regular ones. They are not fluffy, but they taste amazing and no syrup necessary. Top with melted butter, blueberries or strawberries and devour! See here.

5. Chocolate Chip Fat Bombs

I don’t know about you, but I have a major sweet tooth. Major. The thing is, the keto lifestyle is not exactly conducive to loving the sweet life. The answer: Fat bombs made with Swerve! This recipe is simple and lasts a while if you properly portion them. Which I will admit, I don’t always do. They are that good! The recipe comes from a keto Facebook group I belong to called F.L.Y. Keto with Stacey.
